It’s a big world out there!

In the world of cheese, contrary to what many Americans believe, there are many varieties of cheese available besides Velveeta.

We jest!

And in the world of goat cheese, there are many varieties available other than Chevre, which is just about the only goat milk cheese any American has tasted, and that is usually a crumbled concoction sprinkled over salad in some restaurants.

In practically any country other than the United States, goat milk cheese is considered a staple and beloved item on the daily diet.  Items like Brie, Gouda, and Halloumi are eaten daily around the world, savored for their exquisite taste.  Unlike cow milk cheese, goat milk cheese actually improves with age. Subtle flavors rise after a certain amount of time has passed.  Properly made, goat milk cheese is often creamy and smooth.

It’s a big world out there!

We don’t make goat milk cheese here at Mt. Capra but our predecessor, Melvin Eggars, did, and he produced a product which was popular for sixty years, a cheese so rich in flavor that it was talked about across this great country.

What we have found during our time making goat milk products is that the term “goat milk” is misunderstood, and because it is not as common as cow milk it is not trusted as much, which is all silly considering studies show the benefits of goat milk vs cow milk are far greater.  Like all things, change takes time, and changing the eating habits of an entire country will also take time.  Just as our goat milk products, our probiotics, our whey, our ghee, and our cleansing supplements, are now recognized for their health benefits, so too goat milk cheeses will one day be recognized as far superior to cow milk cheeses.

It just takes time!  It’s a big world out there, and one day that big world will infiltrate our buying habits here in the States.  And when that happens we will all benefit from it.

Take our advice: go to a local supplier of goat milk cheese and give them a try.  You won’t be disappointed!
