How Mt. Capra produces lactose from goats milk:
We extract the milk proteins using a process known as lacto-fermentation, which leaves the whey, which contains minerals and lactose. A centrifuge extracts the minerals from the whey. Once the minerals are removed from the whey, only the lactose remains. We evaporate the liquid lactose, and a powdery lactose is the end product. All natural!
