Mt. Capra’s 100% Goat Milk Ghee (also known as clarified butter) starts as fresh goat milk harvested from our own grass-fed, pastured goats on our farm in the Pacific Northwest. It then passes through a cream separator which extracts the cream from the milk using no chemicals. The cream is then gently simmered for several hours while the remaining milk solids, protein, and lactose are removed leaving a pure goat milk butter oil.

What is Goat Milk Ghee?

Mt. Capra’s Award-winning, 100% Goat Milk Ghee starts as fresh goat milk harvested from our own grass-fed, pastured goats on our farm in the Pacific Northwest. The cream from our goat milk is churned into butter and then gently simmered for several hours. During each small-batch simmer, the milk solids, protein, and lactose are removed from the butter leaving behind a pure clarified butter oil.

How should I store my Ghee?

Ghee is completely shelf stable and needs no refrigeration. However everything lasts longer when stored at cool to cold temperatures so you can extend the shelf life of your ghee by storing in the refrigerator. Due to the high content of medium chain fatty acids (MCT’s), goat milk ghee may be semi-liquid at room temperature it will however quickly solidify in the fridge.

Using your Ghee

Use a clean, dry utensil each time you remove ghee from the jar. While clarified butter is shelf stable it will quickly grow mold if bacteria or food particles are introduced into the bottle.

Ghee is a natural food product and so natural variations from batch to batch should be considered normal. At this time we do not filter the ghee so sometimes small patches of darker brown solids will be seen at the bottom of the jar. This is totally normal.

The fatty acids that make up goat milk are far different than cow milk. Goat milk contains an abundance of medium chain triglycerides (MCT’s) which do not harden at room temperature. If you want your goat milk ghee to be solid like butter, simply keep it in the fridge and it will harden up just fine. There is no problem with keeping it on the shelf as it is perfectly shelf stable.

    I bought this to use in the formula recipe for our babies. Wit this ghee it seems to give the milk a richness that our babies go nuts over. I tried the formula with out the ghee and as soon as I added it to they’re milk, they seemed to want even more. They already loved the goats milk, but now they seem to love it even more.

    I bought this ghee to go in the formula we made for my granddaughter. I bought an extra one for me to use in cooking thinking it would taste “disgusting” but worth the health benefits! Boy! was I surprised when I dipped my finger into it and it was DELICIOUS! Buttery, no strong goat milk taste and will make my recipes awesome!     Due to several different reasons we were forced to supplement our newborn daughter from 3 days old. She became very rigid and “board-like” while on regular formula, she start to fuss when we put her knees to her belly and seemed irritable. She was over alert for such a bitty baby and it seemed the only way to get her to sleep in the evening was to let her cry and “burn off” all the extra energy she had. We decided to put her on the goats milk formula starting at 5 weeks old. We ordered the starter kit which includes goat milk Ghee and after just 24 hrs it was as though we were given our newborn back. She is much easier to console, not near as rigid and will even fall asleep in our arms! This may be to much information but one thing that really surprised me is her formula poop looked more formed, dark brown/green and smelled like an adult poop. While on goats milk formula it returned to the typical orange/yellow breast fed baby poop without a strong odor. Clearly the contents of the goats milk formula is very similar to breast milk. Thank you for giving us the ability to really enjoy our newborn!

    We were given a sample of ghee during our visit to the Mt. Capra store. After using it for a week, we knew we needed to buy more! It smells very sweet, almost like cotton candy (13 year old’s words) and is a perfect addition to bulletproof coffee. We’ve used it for cooking and baking, as well and it’s a nice alternative to coconut oil, for us.

    I’m lactose intolerant, and so products containing cows milk have typically caused a lot of digestive upset for me, if not immediately, sometimes up to 12 or 24 hours later. After a lot of research, not only regarding the pros of goat’s milk as an alternative for those who have lactose intolerance, but also after having researched genetic components of said intolerances; goat’s milk seems to be the perfect milk for many folks of European and Asian ancestry (which applies to myself). It appears to me that it has a lot to do with the types of animals these ancestors were utilizing in the past (cows just weren’t an animal that thrived very often on the sides of steep mountains and very cold climates). So, I gave Goat Milk Ghee a try. Verdict: I’ve had zero digestive upset with this product, and it doesn’t matter how much I consume in a day, still no digestive upset. With cow’s milk ghee, there seemed to be a limit as to how much my body could tolerate in a day (i.e. putting it in coffee, and cooking with it). So, while taste and preference are very specific individually, I myself prefer goat’s milk products to cow’s milk all the time now. I’ve also begun to venture out with other Mt. Capra products to see what else I might find that I really like. Additionally, I enjoy the emailed newsletters that I receive; I find them interesting and informative.
