Our energy levels can wax and wane throughout the day, especially if we have had caffeine or sugar at any point. In the Summer, the heat often gets to us and makes us feel drained. While the nice weather is beautiful, it is hard to enjoy it without energy! 😞
The main reason the Summer heat can be especially taxing is that water from our bodies evaporates faster through sweat and breathing, causing us to become dehydrated easier. For most of us, we also don’t take in enough minerals in a day, and even if we eat a “balanced” diet, our soils are often depleted of key minerals, leaving our water balance off due to not having enough electrolytes to maintain.
A Pineapple Coconut Elixir can help replenish what the sun has diminished with a hefty dose of potassium, some naturally occurring sodium, and a mix of the rest of the needed electrolytes.
The coconut cream in the recipe helps add in healthy fats in the form of easier to digest MCTs for quick fuel. I typically use a stick coffee blender and a spoon to dissolve it as best I can and chew any little chunks that are left, but if you would prefer a smoother result, you could either blend it, try thinner coconut milk instead, or skip the coconut cream altogether and swap out the sparkling water for coconut water. You can make it up however tastes the best to you.

Pineapple Coconut Elixir
Description
This is a perfectly refreshing Summer drink. Sweet pineapple combines with fizzy sparkling water and creamy coconut cream for a tropical treat. Grab a lounge chair and enjoy!
Ingredients
- 1/2 cup pineapple juice (nothing else added)
- 1/2 cup sparkling water
- 2 Tbs coconut cream or canned coconut milk
- 1 serving (10g) Clean Electrolytes
- Ice cubes if desired
Instructions
Use a handheld blender, coffee stick, blender or trusty spoon to mix the ingredients together. The coconut cream can be a bit chunky, but is a great nutrient booster, if you like it.
If you don’t have canned coconut milk or cream or prefer to try something different, try swapping the sparkling water for pure coconut water.
