Ingredients

  • 2 tbsp Mt. Capra Goat Milk Ghee
  • 1 large leek, white and light green parts only, sliced
  • 2 cloves garlic, minced
  • 4 cups broccoli florets, chopped
  • 2 Yukon potatoes, peeled and sliced
  • 3 cups high-quality broth (or water)
  • 1 bay leaf
  • 1/2 tsp dried thyme
  • 1/8 tsp ground white pepper
  • 1/4 tsp ground nutmeg
  • 1/4 cup Mt. Capra Goat Milk Cream
  • 1 1⁄4 tsp sea salt, to taste

Instructions

  1. In a medium pot, melt the ghee over medium heat. Add the leek and sauté for 5 to 6 minutes, until soft and fragrant but not browned.
  2. Stir in the garlic and cook for about 30 seconds, just until fragrant.
  3. Add the broccoli, potatoes, broth, bay leaf, thyme, pepper, and nutmeg. Bring to a gentle boil, then reduce the heat and simmer for 12 to 15 minutes, until the vegetables are very tender.
  4. While the soup simmers, hydrate the goat milk cream flakes by stirring them into 1/2 cup water. Set aside.
  5. Remove the bay leaf. Blend the soup until smooth using an immersion blender, or carefully transfer to a high-speed blender. If using a high-speed blender, allow the soup to cool slightly and start blending on low, increasing speed gradually.
  6. Return the soup to low heat and stir in the hydrated goat milk cream until fully incorporated. Blend briefly again if needed for a smoother texture. Season with sea salt to taste.
  7. Serve warm as a nourishing side soup.
